Sweet Potato Apple Soup

Looking for a last minute dish to complete your Thanksgiving symphony? How about this nourishing, grounding soup?!

The Recipe

1 lb carrots

1 apple

3-4 tbsp nubeleaf Sweet Potato Powder

1/2 onion

1 clove garlic

1/4-1/2 cup coconut milk

1-2 cup vegetable broth

salt to taste

Directions:

  1. Peel and chop carrots

  2. Coat carrots, apple, garlic and onion in some oil and a sprinkle of salt, then roast at 450F for about 20 minutes. Flip halfway through.

  3. Once browned, transfer the above ingredients into a soup pot, add the coconut milk and half the broth. Use an immersion blender and blend until thinned into a puree. You can also blend all these ingredients in a blender and then transfer into a pot.

  4. Stir nubeleaf Sweet Potato Powder into the rest of the broth until soup is of desired consistency. Add water and salt to taste.

  5. Serve with a sprinkle of scallions, chopped cauliflower, cheese and croutons or a dusting of nubeleaf Organic Kale Powder.
