Mexican Fried Rice

This recipe is a favorite in my household. This is the perfect side dish to make a lot of and use for meal prep to get you through the week. The key to making this rice perfectly is in the browning of the rice before the broth and nubeleaf’s Organic Tomato Powder is added in. When most of the rice has changed in color and looks browned, that is when to add in the other ingredients.

Ingredients:

nubeleaf Mexican Fried Rice
  • 1 cup uncooked white rice

  • 2 tablespoons nubeleaf Organic Tomato Powder

  • 3 tablespoons avocado oil (or cooking oil of your choice)

  • 1 teaspoon garlic salt

  • 1/2 teaspoon ground cumin

  • 2 1/2 cups vegetable broth (chicken broth works great as well for all of my meat eaters!)

  • 1/4 cup chopped onion

Directions:

  1. Heat oil in a large saucepan over medium heat and add rice. Cook, stirring constantly, until puffed and golden. While rice is cooking, sprinkle with salt and cumin.

  2. Stir in onions and cook until tender. Stir in Organic Tomato Powder and broth; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork.
