Sweet Potato Breakfast Muffins

Whip up these delicious, flourless breakfast muffins this weekend… they’re plenty filling and kid-approved!

The Recipe

2 tbsp nubeleaf Sweet Potato Powder

2 ripe bananas

2 eggs

2/3 cup nut butter

4 tbsp maple syrup or honey

2 tsp cinnamon

3/4 tsp ground ginger

1/2 tsp allspice

1/4 tsp nutmeg

2 tsp baking powder

Directions:

Preheat the oven to 350 degrees F. Grease a muffin tin. Place all ingredients (except the baking powder) in a blender or food processor. Blend on high until smooth. Add the baking powder and blend on low until just combined. Pour the batter into the muffin tin, filling each cup 3/4 of the way full.
