Sweet Potato Apple Carrot Soup

Made with carrots, apples, nubeleaf sweet potato powder, this is an easy and quick recipe great for lunch or dinner.

Sweet Potato Apple Carrot Soup

The Recipe

1 lb carrots, peeled and chopped into coins

1 large apple, peeled and sliced

3 - 4 tablespoons nubeleaf sweet potato powder

1/2 onion

1 clove garlic

1/4 - 1/2 cup coconut milk

1-2 cups vegetable broth

Salt to taste 

Directions:

Coat carrots, apple, garlic and onion in some oil and a sprinkle of salt, then roast at 450F for about 20 minutes. Flip halfway through.

Once browned, transfer the above ingredients into a soup pot, add the coconut milk and half the broth. Use an immersion blender and blend until thinned into a puree. You can also blend all these ingredients in a blender and then transfer into a pot. 

Add nubeleaf sweet potato powder, the rest of the broth until soup is of desired consistency. Add water and salt to taste. 

Serve with a sprinkle of scallions, cheese and croutons or a dusting of nubeleaf Kale Powder.
