Warming Winter Soup

Warm up with this delicious and healing soup - full of hearty goodness and liver-friendly detoxifiers! 

 

The Recipe

1/2 cup sliced shiitake mushrooms

2 cloves minced garlic

1 tbsp nubeleaf Organic Ginger Powder

1/2 cup sliced burdock root

1/2 cup sliced carrots

2 sliced leeks

2 tbsp ghee or olive oil

5 cups vegetable or chicken stock

2 tbsp miso paste

fresh cilantro or scallions to garnish

Directions:

In a large pot, sauté first 7 ingredients in olive oil for 10 minutes. Add stock or water and bring to a boil. Lower heat, cover, and simmer for 20-25 minutes or until vegetables are tender. Dissolve miso in small amount of hot broth and add to soup. Turn off heat and add cilantro and scallions. Cover and let stand for 5 minutes. Serve hot. Enjoy!
